Why Chefs Send You to Firedoor

Some restaurants become famous because everyone talks about them. The best become famous because chefs do.

Whenever I travel, I ask chefs where they’d eat on their night off. Awards and rankings rarely tell the full story. The places professionals recommend to each other usually do.

Before travelling across Australia, my brother-in-law, himself a chef, had only one instruction: don’t leave Sydney without eating at Firedoor. Securing a reservation was almost as difficult as getting to Australia. Rearranging the trip around dinner turned out to be the best decision we made.

Firedoor is often described by what it doesn’t have. No gas. No electricity. Everything cooked over wood. They’re impressive facts, but they aren’t what makes the restaurant exceptional. Fire is simply the tool. Flavour is the obsession.

Too many restaurants mistake complexity for excellence. Firedoor does the opposite. Every dish is stripped back until the ingredient has nowhere to hide. The wood isn’t there to overpower the food. It’s there to reveal it. That restraint is what separates good cooking from great cooking.

The room reflects the same confidence. The open kitchen never feels like theatre, the service never feels rehearsed. We arrived with a jet-lagged toddler after crossing the world, hardly ideal circumstances for one of Sydney’s hardest reservations to secure. The team simply adapted around us, leaving the food exactly where it belonged, at the centre of the evening.

Years later, I couldn’t tell you every course.

I can still remember the flavour.

That’s the mark of a great restaurant. The best meals aren’t remembered because of clever techniques or elaborate presentations. They’re remembered because they permanently shift your expectations of what food can taste like.

There’s a reason chefs continue recommending Firedoor to other chefs. They understand how unforgiving this style of cooking really is. Every log burns differently. Every ember behaves differently. When you’re cooking over fire, there’s nowhere to hide.

Sydney has no shortage of excellent restaurants.
